Dhokla Recipe: How To Cook This Absolute Delight From Gujarat!

While the quintessential Indian cuisine is mostly identified by popular delicacies that have their root in North Indian, South Indian cuisine has its place of pride. However, apart from these two significant cuisines, there are several regional tastes and smells, that stand apart because they are different and refreshing. For example, if one travels to the West of India, mainly, to the state of Gujarat, one would be greeted by distinct culinary delights that are both iconic, and at the same time, simple to make.

When it comes to Gujarati cuisine, the Dhoklas are a must-try recipe. They are probably the most popular Gujarati snack that promises to be healthy and a delight for the taste buds. The traditional dish of Gujarat that even found mention in a Jain text in 1066 CE can be prepared in just about half an hour. A typical serving has about 100 calories. No wonder that this light Gujarati snack is enjoyed without guilt by many across the country.

There is generally a confusion between Dhokla and Khaman, but the two are not the same thing as there is a difference in the recipes. Khaman is made from chickpeas gram and has a yellow appearance. The former, on the other hand, is made from rice gram and appears white in color. 

What you’ll need
  • Gram flour - 1 cup
  • Citric acid - 1 tbsp
  • Sugar - 1 tbsp
  • Salt - As per taste
  • Turmeric - Just a pinch
  • Water
  • Baking Powder - 1 tbsp
  • Steaming tin
  • Oil - 1 tbsp
  • Mustard seeds - ½ tbsp
  • Dried Red Chilli - 1
  • Curry leaves - 7-8
How to make
  • Mix the flour, citric acid, turmeric, salt and sugar in a bowl. Add water to the mix and work it to make a smooth batter that has medium to thick consistency.
  • Take baking powder in a glass, and add water to it. Pour the mix into the earlier prepared mixture. 
  • Take the steaming tin, and put two drops of oil in it to grease it a little. Put the batter in this and cook for about 15-20 minutes.
  • To prepare the tadka, you have to take a pan and add oil, mustard seeds, chili and curry leaves, and let it sit over the fire till it begins to sputter
  • Once you are done, pour the tadka over
  • Neatly cut into pieces of your desired shape and size and serve
Serving Instructions

It can be served as breakfast, as well as an evening snack to be enjoyed with tea. As an accompaniment, you can serve it with fresh, green, flavorful chutney.
